A compact pairing for a smaller kitchen: the Santoku for all-purpose work, the small-jobs Petty for garlic, fruit and anything too fine for the bigger blade. Forged and finished in Seki, Japan.

Features

  • The Santoku's flatter edge favors a quick vertical chop over a long rocking cut.
  • The Petty steps in wherever the Santoku is too much knife: peeling, hulling, trimming.
  • Both blades share the same grind, so control carries from the bigger knife to the smaller one.
  • A VG-10 core runs through each blade, hardened to 60 ±2 HRC for an edge that holds.
  • 67 layers of Damascus cladding wrap both cores, each blade carrying its own suminagashi swirl.
  • Weight is set by role, a bit more presence in the Santoku, a lighter hand in the Petty.

Deep-black ebony in an octagonal wa grip runs through both knives, as clean and severe as the steel above it.

About Akito

I didn't grow up in a forge. I grew up watching my grandfather sharpen the same three knives for forty years, and wondering why he never seemed to need a fourth. That question eventually took me to Sakai, Japan, where blacksmiths have shaped steel for over six hundred years. I spent three years there learning one simple thing: a blade isn't finished when it's sharp, it's finished when it disappears in your hand. That's what I set out to build with Akito.

Every Akito knife is still hand-finished in small batches, tested by hand before it ever ships. I'm not chasing scale, I'm chasing the feeling of that first cut. This is the founding collection, made the way I was taught it should be made — and I'd genuinely love for it to be in your kitchen.
