Shizuku Knife Duo (Gyuto & Santoku)
Two ways into the same job: the workhorse Gyuto for a longer curve and a rocking cut, the Santoku for all-purpose work with a flatter, quicker edge. Forged and finished in Seki, Japan.
Features
- The Gyuto's curve favors the rock, taking down herbs and proteins in a rolling motion.
- The Santoku's straighter profile favors the chop, quick and controlled in a smaller kitchen.
- Edge angle and grind match across both, so technique carries straight from one to the other.
- A VG-10 core anchors each blade, hardened to 60 ±2 HRC for an edge that holds its line.
- 67 layers of Damascus wrap that core, each knife carrying its own suminagashi figure.
- Weight sits where the job needs it, a touch more through the Gyuto, a touch less through the Santoku.
An octagonal wa grip inlaid with real abalone runs through both knives, shimmering like light on water.
