Shion Honesuki Boning Knife
Built to work close to the bone: a rigid, narrow tip and a stiff spine follow a joint line without wandering off it. Forged and finished in Seki, Japan.
Features
- The 6-inch blade tracks a joint in one pass instead of sawing back and forth.
- A triangular, rigid tip pierces cleanly between bones and holds its point under pressure.
- The spine stays straight through thigh and breast, where softer steel would flex off line.
- A VG-10 core sits at the heart of the blade, hardened to 60 ±2 HRC for an edge that lasts a full breakdown.
- 67 layers of Damascus cladding wrap that core, each face carrying its own suminagashi swirl.
- At roughly 5 oz, the balance sits well forward of the grip for close, controlled work.
An octagonal wa grip in blue resin holds sure and dry through a wet job.
