Two knives that cover a full prep list between them: the workhorse Gyuto for the bulk of the board, the small-jobs Petty for garlic, fruit and the fine work in between. Forged and finished in Seki, Japan.

  • The Gyuto's curve rocks through onions and herbs while its flat drives straight through proteins.
  • The Petty steps in for peeling, hulling and anything too small for the bigger blade.
  • Edge geometry is matched across both, so the angle you learn on one carries to the other.
  • A VG-10 core runs through each blade, hardened to 60 ±2 HRC for an edge that holds.
  • Both are clad in 67 layers of Damascus, each blade carrying its own suminagashi swirl.
  • Weight is set to the job, real heft through the Gyuto, a light hand through the Petty.

An octagonal wa grip in rosewood runs through the pair, the same warm grain top to bottom.

About Akito

I didn't grow up in a forge. I grew up watching my grandfather sharpen the same three knives for forty years, and wondering why he never seemed to need a fourth. That question eventually took me to Sakai, Japan, where blacksmiths have shaped steel for over six hundred years. I spent three years there learning one simple thing: a blade isn't finished when it's sharp, it's finished when it disappears in your hand. That's what I set out to build with Akito.

Every Akito knife is still hand-finished in small batches, tested by hand before it ever ships. I'm not chasing scale, I'm chasing the feeling of that first cut. This is the founding collection, made the way I was taught it should be made — and I'd genuinely love for it to be in your kitchen.
