Samidare Knife Duo (Gyuto & Petty)
Two Samidare blades built to share a block: the workhorse Gyuto for the bulk of the cutting, the small-jobs Petty for anything that calls for a lighter touch. Forged and finished in Seki, Japan.
Features
- The Gyuto's curve carries a rock chop while the Petty stays in-hand for fast, precise cuts.
- The two knives are ground to one edge angle, so a single sharpening session keeps both keen.
- Buy the pair together and the grip, steel and finish match from the first cut.
- Each core runs VG-10 hardened to 60 ±2 HRC, so both edges hold their bite at the same rate.
- 67 layers of Damascus wrap each blade in its own current-of-water pattern.
- Weight varies between the pair, though the Petty stays light enough for a full evening of prep.
Rosewood in an octagonal wa grip on both knives, warm against the cool Damascus.
