Raiden Gyuto Chef Knife
The blade that never leaves the block. An 8-inch Gyuto profile, curved enough to rock through a chef's mise en place and flat enough at the heel to chop clean through a stack of onions. Forged and finished in Seki, Japan.
Features
- The curve carries a rock chop from tip to heel without lifting the edge off the board.
- Near the heel, the profile flattens out for a straight push cut through dense roots.
- Enough blade to portion a whole chicken or break down a head of cabbage in the same session.
- Inside the Damascus sits a VG-10 heart brought to 60 ±2 on the Rockwell scale: keen out of the box, slow to dull.
- Folded 67 times around the center steel, the suminagashi jacket wears a current-of-water pattern.
- At close to 7 oz, the balance sits forward enough for momentum without tiring the wrist.
An ebony octagonal wa grip, its collar turned in rosewood and closed off with a ring of turquoise.
