The vegetable specialist of the Konoha line. Its flat, straight edge meets the board square for clean push cuts through anything grown in the ground. Forged and finished in Seki, Japan.

Features

  • No belly to the blade means the full edge lands at once, straight through carrots and daikon.
  • The tall, rectangular profile shields the knuckles and lifts the finished pile clear of the board.
  • A thin grind parts dense roots cleanly instead of wedging and splitting them.
  • Inside the Damascus sits a VG-10 heart brought to 60 ±2 on the Rockwell scale: keen out of the box, slow to dull.
  • Folded 67 times around the center steel, the suminagashi jacket wears a current-of-water pattern.
  • It weighs in near 8.6 oz, so a long prep session still leaves the wrist fresh.

Spalted burl set into a western riveted grip, a steel bolster and end cap holding the wood steady through wet work.

Covered for life against manufacturing defects, with 30-day returns. Ships free from our US warehouse with fast delivery.

THE CRAFTSMAN BEHIND AKITO

About Akito

I didn't grow up in a forge. I grew up watching my grandfather sharpen the same three knives for forty years, and wondering why he never seemed to need a fourth. That question eventually took me to Sakai, Japan, where blacksmiths have shaped steel for over six hundred years. I spent three years there learning one simple thing: a blade isn't finished when it's sharp, it's finished when it disappears in your hand. That's what I set out to build with Akito.

Every Akito knife is still hand-finished in small batches, tested by hand before it ever ships. I'm not chasing scale, I'm chasing the feeling of that first cut. This is the founding collection, made the way I was taught it should be made — and I'd genuinely love for it to be in your kitchen.
